Banana Bread

  1. Preheat oven to 350.
  2. Spray a non-stick spray on your pan of choice. I like the coconut oil spray. I also prefer using small 1 lb. bread loaf pans. It is the perfect size to give away to friends and family AND the banana bread cooks perfectly in this size. Cupcakes are fun too!
  3. Mix dry ingredients in one bowl with a whisk- baking soda, baking powder, salt, cinnamon, nutmeg, almond flour and oat flour.
  4. Mix wet ingredients in another bowl- coconut oil, eggs, bananas, maple syrup and vanilla extract.
  5. Add dry ingredients to wet ingredients and mix thoroughly with a whisk.
  6. Pour batter into pan and bake for 40 minutes. Remove and cool before eating. ENJOY!
  7. I love smearing almond butter over a slice of banana bread! YUM!
