Mash banana well until most of the lumps have been removed. Place in a bowl.
Add 2 eggs to bowl with banana and whisk everything together.
Heat large pan. Add 1/2 tbsp. of coconut oil.
Pour banana and eggs into pan.
Let lightly brown. Cut pancake into four pieces and flip each of them.
Lightly brown the other side and serve.
Option to add cinnamon, fresh fruit, peanut butter, maple syrup, honey or any other delicious topping.
Recipe Notes
Use organic ingredients if possible. If you like vanilla, add a dash of vanilla extract to the bowl before cooking. Thank you to my Healthy Moms Club OC group for this great idea!
