Fresh Herb Potato Salad

  1. Quarter potatoes or cut them into pieces that are small enough to put in your mouth.
  2. In a pot, boil water. Toss in potatoes. Cook through but do not over cook so that they do not fall apart.
  3. Drain water and place potatoes into a bowl.
  4. Pour the remaining ingredients over the potatoes and mix in.
  5. Eat immediately or place in the fridge. It keeps well overnight. Potatoes soak in a lot of liquid so if it is too dry the next day, just add a little more olive oil and lemon juice.
