Mexican Quinoa
Instructions
  1. Rinse the quinoa. Boil 1 ¼ cup of water. Add quinoa and cook on low for 10-12 minutes. Let cool.
  2. Add corn, pepper, cherry tomatoes, black beans, cilantro, lime juice, olive oil and salt.
  3. Mix.
  4. Serve at room temperature.
