Mexican Quinoa
Ingredients

quinoa

cup
corn (preferably organic frozen corn or fresh steamed organic corn cut from the cob. If you use canned corn make sure it is organic
no salt added and BPA-free)

red pepper
chopped

cherry tomatoes
halved
1/2
cup
cooked black beans or ½ can black beans

tbsp.
fresh cilantro
chopped
1
lime
1/4
cup
of olive oil
1/2
tsp.
ground celtic sea salt
Instructions
Rinse the quinoa. Boil 1 ¼ cup of water. Add quinoa and cook on low for 10-12 minutes. Let cool.
Add corn, pepper, cherry tomatoes, black beans, cilantro, lime juice, olive oil and salt.
Mix.
Serve at room temperature.
