I love squash season! Nothing beats a sweet squash that is roasted in the oven!
This year, I’ve been eating lots of Kabocha squash. It is so sweet and I love the texture! My daughter calls them potatoes because their consistency is starchy…yum!
Try roasting your favorite squash. It warms the body which is nice now that the temperatures are dropping around here. Also makes for a delicious side dish!
Cut the squash, place them on a baking sheet, drizzle a little olive oil, sprinkle some salt, mix them around making sure the oil and salt coats each side and toss in the oven at 400 for 30-40 minutes. I love when they start to slightly brown, tastes so good! Option to add a dash of cinnamon. My sister-in-law taught me that one…it adds a little fall flavor to it!
