This is my favorite little breakfast item to make for the kids right now!

Instructions
- Mash banana well until most of the lumps have been removed. Place in a bowl.
- Add 2 eggs to bowl with banana and whisk everything together.
- Heat large pan. Add 1/2 tbsp. of coconut oil.
- Pour banana and eggs into pan.
- Let lightly brown. Cut pancake into four pieces and flip each of them.
- Lightly brown the other side and serve.
- Option to add cinnamon, fresh fruit, peanut butter, maple syrup, honey or any other delicious topping.
Recipe Notes
Use organic ingredients if possible. If you like vanilla, add a dash of vanilla extract to the bowl before cooking. Thank you to my Healthy Moms Club OC group for this great idea!
