Ingredients
- 1 cup quinoa
- 1 cup corn (preferably organic frozen corn or fresh steamed organic corn cut from the cob. If you use canned corn make sure it is organic no salt added and BPA-free)
- 1 red pepper chopped
- 15 cherry tomatoes halved
- 1/2 cup cooked black beans or ½ can black beans
- 2 tbsp. fresh cilantro chopped
- 1 lime
- 1/4 cup of olive oil
- 1/2 tsp. ground celtic sea salt

Instructions
- Rinse the quinoa. Boil 1 ¼ cup of water. Add quinoa and cook on low for 10-12 minutes. Let cool.
- Add corn, pepper, cherry tomatoes, black beans, cilantro, lime juice, olive oil and salt.
- Mix.
- Serve at room temperature.
