Rinse the quinoa. Boil 1 ¼ cup of water. Add quinoa and cook on low for 10-12 minutes. Let cool.
Add corn, pepper, cherry tomatoes, black beans, cilantro, lime juice, olive oil and salt.
Serve at room temperature.
Use organic ingredients, if possible. This is great on the go!
