Ingredients
- 2 lbs. of red potatoes
- 1/4 cup green onions chopped
- 1/4 cup parsley chopped
- 1/4 cup fresh basil chopped
- 2 tbsp. lemon juice or about 1 lemon
- 1/4 cup olive oil
- Salt and pepper

Instructions
- Quarter potatoes or cut them into pieces that are small enough to put in your mouth.
- In a pot, boil water. Toss in potatoes. Cook through but do not over cook so that they do not fall apart.
- Drain water and place potatoes into a bowl.
- Pour the remaining ingredients over the potatoes and mix in.
- Eat immediately or place in the fridge. It keeps well overnight. Potatoes soak in a lot of liquid so if it is too dry the next day, just add a little more olive oil and lemon juice.
